Did you use a whisk for mixing the dough? Using a rubber spatula or spoon won’t give the same result. The heat in the oven causes air bubble in the bread to expand and set. If they were small/not there the dough would rise quickly with added heat, but won’t set while baking, causing it to fall flat when it cools 🙁 We hope you will give it a another try!

The protein powder helps to give it body, replacing the flour component here. It also helps to add a bit more protein and fats to the recipe. The protein powder can be a different brand to save money– but still needs to be a keto friendly formula 🙂

Ohmygoodness! This recipe is great! I didn’t have vanilla protein powder, only chocolate and all I had was orange rind. It baked for 20 minutes and was so very good. I used sugar-free blueberry syrup on it! Very good! Would make awesome French toast! Thank you!

– whey protein isolate instead of the protein powder
– cultured butter
– Lakanto instead of stevia
– frozen raspberries instead of blueberries

I made the brioche in silicon muffin liners, they puffed up and were done in 10 minutes. The resulting brioche were very dry, not buttery.

The raspberry sauce, sweetened with Lakanto to taste, did not thicken as much as I wanted, so I added 1/2 tsp cornstarch, yes a few more carbs. IT WAS DYNAMITE.

I will explore other flours to see if I can obtain a moister, more buttery product. Will be looking into keto cream puff options.
