I&#8217;m not a huge fan of potatoes so instead I opt to make my pot roast with radishes instead.&nbsp;<\/p>\n<p>By replacing the potatoes with radishes it&#8217;s an easy way to reduce the carbohydrates in dish. We also don&#8217;t add cornstarch to our pot roast so that&#8217;s another way to reduce the carbs in our meal.<\/p>\n<p>And because I don&#8217;t always remember to throw everything into the slow cooker before a long day at work, I love using the Instant Pot to make this pot roast tender and delicious in a fraction of the time.<\/p>\n<h2><span style=\"font-weight: 400;\"><img Then it is slowly cooked in an oven, pressure cooker, or crock pot for 8+ hours. Vegetables, herbs, spices and liquid are also added to it. Our keto pot roast recipe is full of flavor, but takes a fraction of the time to make and makes less dirty dishes by using an instant pot.&nbsp;<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"How_to_make_a_pot_roast\"><\/span><strong>How to make a pot roast?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">To make a pot roast you need to select a fatter cut of beef. Our recipe calls for a <strong>beef chuck roast,<\/strong> but other visibly fatter cuts of beef will be a good pot roast meat. These cuts are large and often cheaper because these have more fat than expensive, leaner cuts of beef. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Once you have selected your beef you need plenty of non-starchy vegetables, herbs, and a couple other ingredients. A properly cooked pot roast should easily tear apart with a fork. Another reason a pot roast is tough is that it has been <strong>overcooked<\/strong> and has dried out. However, our easy instant pot recipe makes it easy to not overcook.&nbsp;<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Why_is_my_pot_roast_chewy\"><\/span><strong>Why is my pot roast chewy?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">If your pot roast is chewy <strong>it is undercooked<\/strong>. The fatter cuts of beef for pot roasts have a lot of connective tissue, which takes time to break down. An overcooked pot roast will become dry and much of the liquid will be gone. This is why it is important to check your pot roast and keep track of how long it has been cooking. The thicker the meat the longer it will take to cook it entirely. &nbsp;<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_temperature_should_my_pot_roast_be\"><\/span><strong>What temperature should my pot roast be?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">The internal temperature varies depending on how done you want your low carb pot roast. The minimum internal temperature should be <\/span><a href=\"https:\/\/www.fsis.usda.gov\/wps\/portal\/fsis\/topics\/food-safety-education\/get-answers\/food-safety-fact-sheets\/safe-food-handling\/safe-minimum-internal-temperature-chart\"><span style=\"font-weight: 400;\">145 degrees Fahrenheit<\/span><\/a><span style=\"font-weight: 400;\"> for medium rare. It has many different settings and methods of cooking. An instant pot can cook frozen meat, but it will take more time to reach the proper temperature. The cook times for various meats range from <\/span><a href=\"https:\/\/instantpot.com\/instantpot-cooking-time\/\"><span style=\"font-weight: 400;\">5 minutes to an hour<\/span><\/a><span style=\"font-weight: 400;\">. In addition, the meat should tear apart easily with a fork if it has cooked long enough.
